The video opens on a smiling woman, and then it cuts to the food. @latryguy posted it with a caption that starts with “My mom” and her tagged account, then says she “always shows out when I come home,” with a second line reading “Everything made from scratch.” The tag points to her own account. The video itself is a walking tour of what she cooked for him.
The first stretch is the main course, set out on platters and in steel chafing pans. There is a long platter of bone in meat dressed with herbs, a thick steak in a glossy sauce with rosemary and garlic cloves on the plate, a platter of golden seafood in a buttery orange sauce with lemon wedges and greens beside it, and a chafing pan of dark braised meat. A whole tray of glazed, deeply browned chicken with green beans underneath follows, and the hashtags on the caption include #surfnturf.
The camera then moves into the kitchen, past a doorway and a row of white cabinets, to the sides. Three ears of corn sit on a rectangular dish, glistening and dusted with seasoning. A plate of rice with beans and herbs sits beside a dish of seared Brussels sprouts. There is a casserole of baked macaroni and cheese with a deep golden crust, with a hand resting at the edge of the pan, and a stockpot opened to show potatoes and sausage tossed with chopped herbs.
Bread and sweets finish the tour. Golden biscuits and cornbread share a wooden board. A round bundt style cake dusted with powdered sugar sits on a cake stand with berries in the corner of the frame. A golden baked dish shares the counter with a dark chocolate cake. She turns to the camera between dishes, laughing, and in the closing seconds a hand reaches into the frame holding a fan of cash bills toward her.
The caption supplies the claim that everything was made from scratch. What the video itself shows, counted dish by dish, is six meat dishes (the chops, the steak, the seafood, the braised meat, the glazed chicken and a second chafing dish of shredded glazed meat with its lid lifted), seven or more sides including bowls of greens lined up on the counter, biscuits and cornbread, and at least three desserts. She appears in a red top between dishes, turning toward the phone and laughing as it moves through the house, which makes the tour feel like a welcome as much as a menu.
A table like this is a hosting project, and the safety rules for large meals apply to a family dinner as much as to a party. The U.S. Department of Agriculture says cooked food should be kept at 140 degrees Fahrenheit or warmer until it is served, which is the job the steel chafing pans in the video are doing. It also says to refrigerate leftovers within two hours of cooking or of taking them off a warming appliance, and within one hour if the room is hotter than 90 degrees.
The agency says to split large batches into shallow containers so they cool quickly, and to cut large roasts into smaller pieces before refrigerating. Leftovers keep three to four days in the refrigerator and three to four months in the freezer, and they should be reheated to 165 degrees, with sauces and gravies brought to a rolling boil.
The same USDA guidance lists the minimum cooking temperatures for the proteins on this table: steaks, chops and roasts of beef, pork or lamb at 145 degrees followed by at least three minutes of rest, and all poultry at 165 degrees. Those are the numbers to check with a thermometer if you are cooking a homecoming meal of your own, because glazed chicken browns long before the center is done.
The seafood platter has its own rule. FoodSafety.gov, the federal food safety site, lists no single temperature for shrimp, lobster, crab and scallops and says to cook them until the flesh is pearly white and opaque. For fish it gives 145 degrees Fahrenheit, or flesh that is no longer translucent and separates easily with a fork. It lists lamb steaks, roasts and chops at 145 degrees with a three minute rest, and ground lamb at 160, which is the number to use if any of the lamb in a spread like this is ground rather than cut.
To cook something like this for a son or daughter coming home, work backward from the table. Put the dishes that hold well, such as the baked pasta, braised meat and potatoes, in warming pans early. Cook the steak and seafood last, since they are what the table is built around and they suffer the most from waiting. Bake the bread and set out the cake before guests arrive so the oven is free, and pack leftovers into shallow containers within two hours of serving.
