Feeding growing boys means having a few dependable dinners that cook themselves while the house is busy. One mom of four showed hers in under half a minute of quick cooking: a glass dish packed with beef, potatoes and vegetables, a bright tomato sauce, a tight cover of foil and a serving style that has everyone reaching for the same warm wrap.

The dinner comes from @farrahfeeds, who opens the scene in a bright modern kitchen as one of her sons walks in, hugs her and kisses her on the cheek. Here is how the dish goes together and how to make a version of it your own.

Layering the dish

The whole recipe happens in one clear glass baking dish. She starts with raw cubed beef, then adds baby potatoes, chopped tomatoes, sliced onions, sliced jalapenos and whole garlic cloves. There is no browning step and no separate pan, which is part of why the dish is so handy on a busy day.

The sauce is mixed right in a glass cup. Tomato paste, lemon juice, spices and water are whisked together, then poured evenly over the beef and vegetables. Aluminum foil is tucked tightly around the rim of the dish, and the baking takes care of the rest.

Served in a wrap

When the dish comes out of the oven, she carries it in with oven mitts and sets it on a trivet on the island. The beef and potatoes are lifted out with tongs and loaded into a flatbread wrap, rolled and offered to her son while other family members cook in the background and laughter fills the kitchen. To show how tender the beef is, she pulls a piece apart with both hands, wearing black disposable gloves.

Why a covered bake makes beef tender

Cubed stew beef usually comes from tougher cuts such as chuck, which have a lot of connective tissue. Cooking them in liquid, tightly covered, creates a moist heat environment that slowly turns that tissue into gelatin. This is the same idea behind a pot roast or stew. Cooks generally bake covered beef cubes in a moderate oven for a couple of hours, and the meat is ready when it pulls apart easily with a fork. Because the video does not give a time or temperature, treat those numbers as general guidance and check the beef by feel.

Tips for a one dish dinner

  • Cut everything to a similar size. Baby potatoes cook evenly when they are small, and cubes of beef of equal size finish together.
  • Seal the foil well. A tight cover keeps the steam in so the meat does not dry out.
  • Use a glass or ceramic dish. Both hold heat evenly. Let a hot glass dish rest on a trivet or dry towel, never on a cold wet surface, to avoid thermal shock.
  • Control the heat. Jalapenos add spice. Remove the seeds and ribs for a milder dish.
  • Check that the beef is done. Beef is safe at 145 degrees Fahrenheit, but braised cubes are best when they are much softer than that.

Making it work for a houseful of boys

Wraps are a smart way to serve a big family because everyone can build their own. Set out warm flatbread, plain yogurt or sour cream, chopped herbs, pickled onions and a squeeze of lemon, and let each person decide how they want to eat. Leftovers are easy to repurpose too. The extra meat and potatoes can be tucked into a quesadilla the next day or turned into a quick hash with a fried egg on top.

Lemon juice in the sauce is a nice detail. Acid brightens rich, slow cooked foods and keeps the tomato from tasting flat. If you do not have a fresh lemon, a splash of vinegar can do a similar job.

Common questions

Can I use a different cut of beef? Chuck roast cut into cubes is a popular choice because it becomes tender when cooked slowly. Lean cuts can turn dry.

Can I prepare it ahead? You can assemble the dish and keep it covered in the refrigerator until it is time to bake. Add the sauce shortly before cooking.

How do I store leftovers? Refrigerate within two hours in a covered container, and reheat to 165 degrees Fahrenheit.

The takeaway

The best family dinners are often the ones that do not ask much of you. A single dish, a few simple ingredients and a cover of foil can deliver a warm meal while you catch a hug from a kid passing through the kitchen. Make room at the counter, because the wraps will go fast.
