Chipotle brought back Pollo Asado with a reworked recipe on August 31, 2026, and paired it with Chili Lime Chips, the first packaged snack the chain has ever put on its menu, calling the combined launch “a brand first” in its own newsroom announcement. Chief Brand Officer Fernando Machado said the two products together gave Chipotle “two compelling reasons to do something we’ve never done before and launch both at once,” according to Chipotle’s press release. It’s a notable moment for a chain whose core protein lineup, chicken, steak, barbacoa, carnitas, and sofritas, has barely changed since it opened its first restaurant in 1993.

What’s New About the Recipe

Pollo Asado itself isn’t a brand-new protein category; Chipotle has tested versions of it before. What’s changed is the recipe: Senior Vice President of Culinary Nevielle Panthaky said the team wanted to “bring more brightness and dimension to Pollo Asado while preserving its savory, smoky flavor,” reworking the marinade around fresh lime and cilantro. The bigger structural first is the Chili Lime Chips, which Chipotle says came directly from watching customers hack their own orders by bringing in outside bagged chips to eat with their bowls. Machado described the internal question directly: “we saw guests hacking their Chipotle orders with packaged chips and asked ourselves: What would this look like done the Chipotle way?” The chips launched digitally for Rewards members on August 31 before rolling out to all guests and locations on September 4.

The chips are made fresh daily with real lime and chili seasoning, and Chipotle emphasizes they contain no artificial colors, flavors, or preservatives, matching the “food with integrity” positioning the brand has built its reputation on for two decades.
